About Comenius assistanships: is it possible to apply for overseas territories (eg. French Polynesia, French Guiana, etc.)?

I was also wondering if there is any difference between the funding for an EU mainland country and for an overseas territory?

These options now come under Erasmus+ and, yes, it is possible to apply for them. For assistantships, you can express a preference, but there is no guarantee that you will get what you want. You can only study in one of these places if your university has an Erasmus+ exchange agreement in place with the relevant institution. The funding level (monthly grant) should be as for France.
